Warm Beet Salad

I am sure most of you lead busy lives just like me.  And if you are also like me, when you are hungry you are hungry NOW!  That is where this recipe comes in handy because it literally takes less than 5 minutes to whip this up.  I just inhaled a Hugh Jass version for my second meal today and mmmm, it was divine!!  

This is a staple here in the Kennedy house!  Let me know if you try it and how you like it!  


Here are the ingredients:

2 cups Mesclun greens
1 cup warm cooked beets (I cooked a pot 2 days ago and had extras in fridge)
1 tablespoon pumpkin seeds
2 tablespoons Feta, crumbled

Layer these in an open bowl or plate.  

Dressing:  In small bowl mix together 1 teaspoon grainy mustard, 1 teaspoon olive oil and 1 - 1.5 Tablespoons balsamic vinegar.  Mix with fork.   Drizzle over salad. Dig in and enjoy!

Listening intently to the Universe

When things are less than perfect, we can find so many things to complain about, which essentially, in 2 years, 2 months, next week, we will have forgotten about. Today, I am grateful for many things that are part of my world, and I am SO ok with them. Besides, perfection is over rated and unattainable. 
Today,
1. I am happy to have a hot cup of coffee in my unfinished kitchen, even though I am waiting for yet the second shipment of my replacement door! I pretty much am efficiently zoning out the little things that still need to be completed here!
2. My body is sore from a workout earlier, but I would rather be sore than sorry I didn't do it. I get to move, jump, walk, run, dance when so many do not have that option.  ‪#‎everydamnday‬
3. I spent this morning checking in with my clients and listening to how they are overcoming, feeling stronger and gaining wisdom and confidence. How can you not love a job like this? ‪#‎thatcoachlife‬
4. My husband left again for up north to work. Not sure when I will see him again, but I know right now we are one step closer to him coming home for good. I got this. Right? ðŸ˜ƒðŸ˜ƒ
5. Tomorrow Morgan has hand surgery, which is a word all moms cringe over when it comes to their children, I believe. It should help him a lot, so some extra prayers would be great! 
Learning to be grateful is a habit, I think. Waking up each day and focusing on the good in life should be like brushing your teeth. 
What you focus on expands. Focus on the good, and the universe will conspire.
