Pumpkin Spice Chocolate Chip Baked Oatmeal

Ahh there is nothing more warming to the soul than the very first Pumpkin Spice Chocolate Chip Oatmeal of the fall season!  It makes me happy!  :-)  Paired with a kick ass mug of Caramel Macchiato coffee with coconut oil (see how I make it here) and this is the recipe for a perfect Sunday morning!

  1. Hey Wendy -
Do you think this recipe is one that could be doubled/tripled to make a few servings at once? Does leftovers stand up ok? Thanks!

    1. Totally! Wow it’s pretty stellar that I took three years to answer this question. I did not get a notification for this and only saw it because I am making this for breakfast tomorrow ha ha. I have made it plenty of times and then reheated it later.
